Pav Bhaji
Description
Pav Bhaji is the most popular street food dish in Mumbai. A spicy, soupy, crunchy mixture of vegetables, pan-fried or tawa-fried with an unique mixture of spices, served with two or three portions of the city’s famed laadi pavs, soaked in butter and Pav Bhaji masala – this combination is a delight for any avid foodie. Nowadays, Pav Bhaji, is also served with toppings ranging from Mozzarella Cheese to grated Paneer to Mushrooms. It has even evolved in some places to become Pav Bhaji Pizzas, Pav Bhaji Dosa etc.Ingredients

Method

Add Cauliflower, Carrots, Green Peas and Capsicum in a pressure cooker. Add water just to cover the Vegetables.

Cook until 5 whistles. Make sure the vegetables get a mushy texture.

Add boiled Potatoes and mash well.

In a kadhai heat Oil and butter on medium flame.

Add Onions and sauté for a minute.

Add Ginger Garlic paste and sauté till Onion is golden in colour.

Add in Tomatoes and cook for 3-4 mins while stirring continuously.

Add little amount of Butter, mix well and cook for 3-4 minutes.

Add Potatoes and mash them along with boiled vegetables using a Potato masher.

Add water little by little for that perfect consistency.

Add some more Butter and mix well.

Add Living Beyond’s Pav Bhaji masala in two parts, half while cooking and half when the bhaji is cooked.

Add the cooked and mashed vegetables and mix well.

Add butter and salt, mix well.

Add some more water and cook for 5-6 minutes.

Garnish with lime juice and freshly chopped Coriander Leaves.
For Pav

Heat a tablespoon of butter and add little Living Beyond’s Pav Bhaji Masala on a tawa.

Dab 2 Pavs at a time and toast them as desired.
For Serving

Portion out the Bhaji on a plate and put a dollop of Butter on top. Place onion and lemon on the side.

Garnish with fresh Coriander and serve along with Pav.
