Rajasthani Laal Maas

Description

Rajasthan a state in Western India is the land of the Kings. Laal Maas, which is a hot and spicy red colored mutton curry, is their well-known dish. The dish is everything about color and flavors. They cook the mutton in a yogurt and onion based sauce with lots of chillies and garlicky flavor. The authentic Laal Maas recipe includes Mathania Chillies because of its colour and spicy taste. Kachari another ingredient is added for sourness and as a meat tenderizer.

Method

  1. Heat Mustard Oil in a pan.
  2. Add sliced Onions and a pinch of Salt. Fry them till golden in color.
  3. Add the washed mutton pieces and cook for 15 minutes on medium flame.
  4. Add the Ginger and Garlic paste along with some Salt and the freshly ground Living Beyond’s Rajasthani Laal Maas masala to the mutton. Mix well for 2-3 minutes.
  5. Then beat the Curd with half teaspoon of Sugar. Add this beaten curd to the mutton. Mix well and cook for 5 minutes on very low flame.
  6. Now put the Mutton along with the masalas in a pressure cooker and add the warm water.
  7. Cook until 4-5 whistles, then let the pressure release on its own. Check if the meat is cooked well, if it is not soft enough then cook little more. (You may also cook the mutton along with the masalas on a low flame for about an hour. This will give you the authentic smoky flavor which the meat gets on cooking for a long duration).
  8. Lastly heat a tablespoon of Oil in another small pan and add chopped garlic. Sauté for few seconds and pour it on the cooked mutton as tempering. Garnish it will freshly cut Coriander Leaves.
  9. Mix well, cover the pan, turn off the heat and let it rest for 6-7 minutes before serving. Serve this hot with steamed rice.
