Description

“Paneer” is a variety of fresh cheese, which is very commonly used in the Indian subcontinent and also in some neighbouring countries like Iran, Azerbaijan, Armenia; either in same form or in a closely related version. This Asian variety of cheese has been in use in the Indian Subcontinent, since ancient Vedic times, according to some experts. The word “Shahi” means royal in Urdu. So, when you join these 2 words, you get a dish, which is fit for consumption by the royals and the rich and the powerful.

Method

  1. Heat Ghee in a kadhai and add Green Chillies, Ginger and Garlic and sauté for a minute.

  2. Now add Onions, Cashew nuts and sauté. Do not brown them; just keep them translucence.

  3. Add tomatoes and salt; mix and sauté for a minute along with our very own Living Beyond’s Shahi Paneer masala homemade by you. (The masala should be premixed in a bowl with 2 tablespoons Curd for added flavor). Now add ½ cup water; cover and cook on low flame for 12-15 minutes. Stir it once again and allow it to cool.
  4. Transfer this mixture into blender and blend until fine texture.
  5. Now pass this curry from the strainer to get that smooth and silky texture. (This is just an option & not mandatory)
  6. Now heat butter in a non-stick pan and add the prepared curry. Stir gently for a while and add the paneer cubes. Add the cream and sprinkle Kasuri Methi powder all over. Mix well and cook for another 2 minutes on low flame.
  7. Before serving garnish with cream and sprinkle cardamom powder (optional)

Note

The Living Beyond Shahi Paneer Masala can also be used to prepare Shahi chicken/ mutton too.
